30 Minute Fully Cooked Ceviche

Finally! I get to share with you my favorite dish to make.

I’ve been making this dish for 6 years and everyone always loves it. It’s perfect for potlucks, movie nights at home, beach picnics, or even just a quiet night in. All you need is a bowl of this ceviche and some tortilla chips and you’re all set!

I must say that I found out about this recipe from a coworker. I’ve made some adjustments but I can’t take full credit for it. She’s the one that introduced me to ceviche after all.

Step 01


If you don’t have this already, now is the time to invest. I love Veggie Wash! Spray it on the veggies, let it soak, rinse, and you will really feel the difference on the vegetables. (Not to mention the discoloration of the water after all the gunk is removed – see photo below)

You can really see the color of the water that changed after soaking the veggies.



Here is an overview of all the ingredients you will be using. ☺

Step 02


Cut the tomatoes in half and take out the seeds with a spoon. Then, dice the tomatoes into 1/4 – 1/2 inch cubes. You want to make it small enough so that you can get a good scoop onto your tortilla chips.

Once you are done dicing all the tomatoes, place in a large bowl for mixing.

Step 03


Continue to dice the shrimp, cucumber, and onion the same way you did for the tomatoes and add to the mixing bowl. Mince the cilantro and add to mixing bowl. Cut limes into ¼ pieces and squeeze into the mixture.

Step 04


Now you’re ready for the sauce base!

Add in the clamato, tapatio, and salt, then MIX IT ALL TOGETHER!!

Step 05

Cut the avocado into slices and garnish with some cilantro



I want to point out that the amount of Tapatio you add is really up to your taste preference. I like really spicy so there are times that I will add a ½ of a bottle and added lots of serrano peppers instead of jalapenos. That’s what I love about this recipe. The taste can easily be changed to suit your palette, and it’s really simple, easy and quick to make.

  • 4 Medium Sized Vine Tomatoes
  • ½ lb Pre Cooked Shrimp
  • ¼ Large Onion
  • 2 Small Persian Cucumbers
  • 2 Jalapenos
  • 1 ½ tbsp of Minced Cilantro
  • 2 Limes
  • ¼ Medium Avocado
  • 1 ½ cup Clamato Juice
  • 1/8 - 1/4 cup Tapatio
  • ½ tsp Salt
